DENOMINATION OF ORIGIN: Monferrato DOC Bianco

CULTIVATION TECHNIQUE: organically grown grapes, cultivated in harmony with the natural environment, without the use of herbicides, chemical fertilizers and other chemical products, certified ICEA

HARVEST AND PRODUCTION
Our Sauvignon Blanc combines a selection of grapes from two vineyards with different exposure: one faces south-west and the other faces north-east, giving this wine a complex character.
The grapes are carefully selected and crushed. 50% of the grapes remains with the skins for a period of 4 hours at 10°C, extracting the finest, most complex aromas from the fruit and the other 50% is directly pressed. The well clarified juice is fermented at 16-18°C in stainless steel tanks. After fermentation it remains with its lees in tanks for 9 months.100% of this wine was made without Malolactic fermentation. Bottling takes place in June.

POTENTIAL AGEING
Ageing Potential: 4 to 6 years.

THE WINEMAKER’S COMMENTS
A lively fresh intense fruity aroma with pineapple, citrus and the grassy character of Sauvignon. On the palate the wine is fresh and lively, well balanced , with good body and persistence.

Try with typical piedmontese “antipasti”, grilled shrimps, smoked chicken, pasta with “meat ragu’ ” sauce and with different kinds of cheeses.
